  • 1½ lbs 650 g shredded green cabbage
  • 3 oz. 85 g unsalted butter
  • salt and pepper

Making low carb simple

Instructions

Instructions are for 4 servings. Please modify as needed.

  1. Shred the cabbage using a food processor, mandolin slicer or a sharp knife.

  2. Place a large skillet over medium heat. Add butter.

  3. Add the cabbage and sauté for at least 15 minutes, stirring from time to time, until the cabbage is wilted and golden brown around the edges.

  4. Lower the heat a little towards the end. Season with salt and pepper to taste.

    With cabbage you can try caraway seeds. Whole or ground. By my opinion it's better than cumin.

    We fried some pieces of bacon first then cooked the cabbage in the bacon fat. It was awesome!

    Thought we would try this recipe. It was good, nice flavor. We usually stir fry cabbage in olive oil, sesame seeds and garlic once a week. Sometimes we add chicken or beef with peppers. Never thought about frying the cabbage in butter, so it was a nice change up. We used Organic Unsalted Butter Stix.

    Hey Libby, although the more primitive spelt flour is an incredible improvement over modern wheat flour it is still rich in carbs and would not be something used in LCHF, at least not in my opinion.

    I did exactly this and my bs sprang up 30 points at the 2 hour mark after eating. Someone mentioned maybe it "carmelized". I was disappointed because I loved fried cabbage.

    I gently fry my cabbage with lots of nutmeg, can't beat it. However I will be trying the turmeric option mentioned here by Jan.

    This is nice. But could someone please explain why it counts as liberal? The creamed cabbage recipe has the same amount of cabbage as this and is marked moderate. I'm a bit confused as to why just butter and cabbage would not be OK on my strict low carb diet.

    The grading of food in liberal/moderate/strict is not a precise science so the grading for quite similar recipes can differ.

    I will ask for an "official" answer regarding this recipe from our recipe department. ;-)

    It's hard to find a way to classify recipes that always makes perfect sense. We've decided to use energy percent, as the least bad option.

    When there's 0-4 percent of energy from carbs we classify it as strict, 5-10 is moderate and 10-20 percent is liberal. We generally do not publish recipes with more than 20 percent carbs.

    Love this with crumbled bacon and some fennel seeds thrown in! I look forward to trying this with Napa cabbage or Pak Choi as the carb level would be even less. Thanks for posting all the wonderful recipes!!

    Cooking a food until it caramelizes does not add any sugar too the food. Unless you actually add sugar of course..

    Fried cabbage is like riced cauliflower. It makes the base for just about anything you want to do with it. Add a protein and a seasoning and it just moves with it. We love to add bacon and Bavarian seasoning with a splash of vinegar. Next I'm going to throw some cream in the top of it. Yay, cabbage!

    I have to be strict about my protein and it would be very hhelpful if the nutrition information on the recipes included the number of protein grams per serving and not just the carbs.

    This cabbage is killer! I use it as a template for dinner several times a week, adding in whatever meat I have ready to go (cooked ground beef, cubed chorizo, pulled pork, roasted salmon etc.), and topping it with chopped hard-boiled eggs, crumbled bacon, crispy prosciutto, whatever.

    That depends on how much your cabbage reduces. This recipe as written makes 4 servings.

    This is very, very good, especially with Kerrygold butter. I used about 25 oz of raw cabbage. I measured 1/4 of the result which looked like a large amount. It was 7 1/8 oz. So I decided that for me, this recipe yields 8 servings, at around 3.5 oz a serving. I used it as a side dish for a stew.

    My Mother used to do this as a side vegetable sauteed with chopped onions, back in tgeb1970s and 80s. The description says green cabbage, but I've always called what's in the video white cabbage. Green cabbage would be spring, or savoy cabbages, and similar. They give a different flavour.

    There is no industry standard for how much salt is included in salted butter. By using unsalted butter, you can add salt and pepper to your particular taste preferences. If you like this with salted butter, that's also fine!
