Nonetheless, this easy palabok recipe yields very delicious saucy noodles you will enjoy. the Palabok is at par with Jollibee’s Palabok.

  • Shrimp, peeled and deveined
  • Tinapa (smoked fish), flaked
  • Garlic, minced
  • Onion, chopped
  • Annatto powder (achuete)
  • Shrimp broth
  • Fish sauce
  • Salt and pepper to taste
  • Boiled eggs, sliced
  • Chopped green onions and fried garlic for garnish
  • Calamansi or lemon wedges

  • In a pan, sauté garlic and onions until fragrant. Add ground pork and cook until browned ground meat. Pour in shrimp broth and bring to a simmer.

Pancit Palabok Topping Substitutions

For the Tinapa, I used smoked Salmon (not as intense as the Tinapa, but the taste is similar).

  1. For the Carcar de Cebu Chicharon, I used Mexican Chicharones (not as crisp as in the Chicharon in the Philippines, but the taste is similar).
  2. For the Palabok Sauce seasoning, I used salt instead of the fish sauce.
  3. I used rice stick noodles instead of the thicker strand Palabok noodles.

How Long Does it Take to Make Palabok

Some people assume that making Pancit Palabok is a complicated process. However, it is not as difficult as they think. For instance, I can make Pancit Palabok quickly after coming home from work. I peel the shrimp, cook the noodles, and fry the onions and garlic. Even though I usually prepare the boiled eggs the night before, the entire process only takes me 35 minutes. Moreover, I have to boil the shrimp for the stock before moving on to the next step.

Ingredients

TOPPINGS:

  • Salmon Flakes
  • Fried garlic
  • boiled egg
  • 3 chopped green onion
  • Chicharones

Palabok Sauce

  • 2 tablespoons Annato oil or canola oil
  • 4 Cloves Minced garlic
  • 1/2 Cup Chopped red onion
  • 1/4 Cup Water
  • 1 Tsp Annato Powder
  • 1 pound ground chicken
  • 6 cups Shrimp Stock
  • 2 Sachet Palabok Sauce Mix
  • Fish sauce
  • 2 Cups Mexican Chicharones, separated

FOR THE NOODLES

  • 16 oz Rice Stick Noodles

Instructions

Prepare the Palabok Sauce

  • Wash the shrimp, remove the head, and remove the remaining shell. Put this in a pan and add in six cups of water. Boil the shrimp meat and the shells until they change their color. Use a strainer to separate the meat from the broth. Discard the shells. Strain for the second time to ensure that impurities are removed.

  • Mix the water and the annato powder until smooth. Set it aside.

  • Add the palabok sauce mix to the shrimp broth. Mix until there are no lumps. Set aside.

  • Heat the annato oil and saute' the garlic and the onion. Add in the ground chicken. Cook ground chicken until it is not pink. Add the annato powder mixture to add color.

  • Pour the palabok sauce mixture. Let it simmer on low heat to thicken the sauce. Continue stirring so that the sauce does not stick to the bottom.

  • Add one cup of the chicharones. Simmer for three more minutes and season the palabok sauce with fish sauce. Season the sauce according to your liking. Fish sauce is not shown on the ingredient photo.

To serve

  • Cook the rice stick noodles per package instructions.

  • Place noodles in deep bowl and add the chicharones. Add the Palabok sauce on top and add all the toppings.
