It’s quite lovely to serve a salad this way, especially for a luncheon, and it’s easy to put together! Serve with a fresh Strawberry Lemonade drink!

Ingredients for a Epic Cobb Salad Board Recipe

You need standard “cobb” ingredients for this board:

  • Rotisserie chicken, bacon, and hard cooked eggs
  • Butter lettuce, tomatoes, black olives, and red onion
  • Roguefort cheese
  • Thousand Island Dressing (you can make your own, or try my Best Thousand Island Dressing!)
  • Avocados, lemon slices, and parsley for garnish

How to prepare the day before:

  1. Get your shopping done the day before. It always makes hosting the next day less stressful.
  2. Boil the eggs. You can use my Soft Boiled Egg method for the perfect eggs! Allow to cool, peel, and keep in the fridge.
  3. Cook the bacon; cool and chop into small pieces.
  4. Arrange the olives, sliced onions, and dressing in a small bowls, cover and store in the fridge.
  5. Pull and chop the rotisserie chicken and place on a large plate.

The day of, it’s easy to assemble the ingredients for this board in no time!

In years past, my entertaining was a little different than it is now. We live a more casual lifestyle now, which I love, and which translates into easy entertaining. I’m also in a different season of my life now.

Ingredients

  • 4 cups rotisserie chicken, chopped
  • 16 slices bacon, cooked and chopped
  • 8 hard-cooked eggs, cooled and cut in half
  • 6 small tomatoes, quartered
  • 2 heads of butter lettuce, chopped or lay leaves down
  • 1 brick Roquefort cheese
  • 1 small onion, thinly sliced
  • 1 cup black olives, drained and sliced
  • 2 cups Thousand Island Dressing, or make your own - LINK
  • 3 large avocados, halved
  • 8 slices lemon
  • Parsley, for garnish

Instructions

  • On a large prepared board, leave space for a large plate in the center of the board to hold the chicken, sliced eggs, and bacon.

  • In small bowls, place the sliced olives, red onion, and dressing.

  • Around the outside, arrange the butter leaf lettuce (optional to chop it ahead of time).

  • Fill in open spaces for the remaining ingredients. Add lemon slices and parsley for garnish and serve!
